I've been trying to perfect my Pumpkin Chocolate Chip Cookie recipe over the weekend. (not such a bad chore really..!) The first batch was decent. The second batch a little scorched (oops!) and once I decided not to be shy with the Cinnamon and Nutmeg, the 3rd batch was pretty delicious!
INGREDIENTS:
1 Cup Margarine
1 1/2 Cups Sugar
1/2 Cup Brown Sugar
2 Eggs
2 Tsp Pure Vanilla
1 Can Pumpkin Puree
4 Cups Flour
1 1/2 Tsp Baking Powder
1 Tsp Baking Soda
1 Tsp Salt
1 Tbl Spoon Cinnamon
1 Tbl Spoon Nutmeg
1 Bag of Semi-Sweet Chocolate Chips
INSTRUCTIONS:
1. Pre-Heat Oven to 375 Degrees and Grease your Cookie Sheet
2. Cream Together the Margarine and Sugars.
Beat in Eggs one at a time.
Stir in Vanilla & Pumpkin until well Blended
3. Combine Flour, Baking Soda, Baking Powder, Salt, Cinnamon and Nutmeg in Separate Bowl
Stir this into Pumpkin Mixture
4. Mix in the Chocolate Chips
Take a Taste... or Two! :)
5. Spoon Small Mounds an inch or so apart on your Cookie Sheet
6. Bake for 11-13 Mins
7. Cool on Rack
8. Serve with Cold Milk and Enjoy!
